At the main menu, press L1, R1, L2, R2, Square, Circle, Triangle. Start a new game to begin with the Soul Reaver and Iron Armor.

Note: This procedure involves editing a game file; create a backup copy of the file before proceeding. Use a text editor to edit the "game.erg" file in the "data" folder in the game folder. Remove the hyphen "-" character from the line:
